- 2 cups red lentils
- 3 tablespoons vegetable oil

- 1/2 tsp turmeric
- 1 teaspoon black pepper, more or less per preference
- 8-10 cups water or chicken stock
- 1 chicken stock cube, if using water
- Lemon juice, optional
- Crunchy pita chips, optional
Instructions
- Start by peeling and chopping the onions and potatoes into large chunks. For a smoother soup that doesn’t require blending, dice them into smaller cubes.
- In your Instant Pot (an 8Qt pot is recommended for this batch size, see notes), add the vegetable oil, potatoes, onions, and spices. Sauté for 5 minutes. If using a stovetop, use a regular soup pot over medium heat.
- Add the rinsed red lentils and water, stirring well to scrape any bits from the bottom of the pot. Secure the Instant Pot lid. If cooking on the stovetop, cover the pot.
- For the Instant Pot, pressure cook on High for 15 minutes. The pot will take approximately 10-15 minutes to reach pressure.
- For the stovetop, bring to a boil, then reduce heat and simmer for 40-60 minutes, or until the vegetables are very soft and lentils are cooked through. Adjust liquid and salt as needed halfway through.
- Once cooked in the Instant Pot, perform a manual release of the pressure valve. Use an immersion blender to blend the soup to your desired consistency.
- For the stovetop version, you can leave it chunky for a rustic feel or blend it with an immersion blender for a smooth soup.
- Taste the soup and adjust the salt and water content. If you prefer a thinner soup, add more water and allow it to simmer for a few more minutes on sauté mode.
- If preparing crunchy pita topping, cut pita bread into small squares and fry in 3-4 tablespoons of oil over medium heat. Stir continuously until they are golden brown and perfectly crunchy.
- Serve your delicious lentil soup with a squeeze of fresh lemon juice and a sprinkle of crunchy pita chips on top for added texture.

- If you do not own an Instant Pot, simply follow the stovetop instructions. The cooking time will be around 40-60 minutes until the vegetables are tender.
- An 8 Qt Instant Pot was used for this recipe batch. If you have a 6 Qt model, you might consider halving the recipe quantities.
- Potatoes can be omitted if unavailable, though the onions are crucial for flavor.
- Feel free to add carrots to the soup along with the potatoes and onions for extra nutrients and sweetness.
- Adjust the soup’s thickness to your liking at the end. Add more water for a thinner consistency, or simmer longer to thicken it. This recipe typically yields a rich, thick consistency.
