When it comes to my culinary adventures, especially with baked chicken and potatoes, I confess to being a restless innovator. My husband, a creature of habit, often finds himself at the mercy of my ever-evolving recipes. He prefers consistency, yet when I first unveiled this Mediterranean-style roasted chicken, something truly remarkable happened. After just a few bites, he looked at me with a seriousness that could only mean one thing and declared, “Please, promise me you’ll never change this recipe. It’s perfect. Every single time.” That was a monumental moment for me, a clear sign that I had finally struck gold.

Grateful that I had meticulously jotted down every ingredient and precise measurement, I knew this recipe was too good not to share. What truly sets this dish apart, beyond its incredible flavor, is the astonishingly minimal hands-on time required. You’ll spend no more than 10 minutes – possibly even a mere 5 – actively preparing this meal. The rest is pure, effortless baking magic. This simplicity makes it an ideal choice for busy households, allowing you to enjoy a gourmet-quality dinner without the fuss and stress often associated with elaborate cooking.

Beyond its ease, this recipe is a true winner because it cleverly incorporates a medley of vegetables directly into the baking dish, ensuring a balanced and nutritious meal without needing separate side dishes. The ingenious method of roasting the chicken uncovered while simultaneously adding water to the pan is the secret to its success. This technique ensures a symphony of textures and flavors: the chicken skin crisps up beautifully to a golden perfection, while the meat underneath remains incredibly tender and juicy. The added water creates a luscious, flavor-packed sauce at the bottom of the pan, which becomes an irresistible accompaniment. These pan juices, infused with all the vibrant spices and savory goodness, are an absolute dream for mopping up with warm, crusty bread, guaranteeing that not a single drop of deliciousness goes to waste. It’s a complete meal, perfectly baked, incredibly flavorful, and astonishingly easy.

Essential Ingredients for Your Mediterranean Feast

Crafting this incredible Mediterranean chicken dish relies on a combination of fresh, wholesome ingredients and a thoughtfully balanced marinade. Each component plays a crucial role in delivering the authentic flavors and textures that make this recipe so special. Here’s a detailed look at what you’ll need and some helpful substitution tips.

The Heart of the Meal: Chicken and Vegetables

  • Chicken: For the most succulent and flavorful results, I highly recommend using bone-in, skin-on chicken drumsticks or thighs. The bone imparts a deeper flavor to the pan juices, and the skin, when roasted uncovered, achieves that irresistible crispy texture. A mix of both drumsticks and thighs works wonderfully, providing variety. Aim for about 1 kg (approximately 2.2 lbs) to comfortably serve four people. While other cuts can be used with adjustments (see section below), these are truly ideal for this recipe.
  • Yellow-Fleshed Potatoes: These are my top choice for this type of roasted dish. Their creamy texture and mild flavor hold up beautifully during baking, becoming tender on the inside and slightly caramelized on the outside. Ensure they are peeled and chopped into roughly 1-inch cubes to ensure even cooking alongside the chicken. If yellow potatoes are unavailable, feel free to substitute with Yukon Gold, red potatoes, or even small new potatoes; just adjust the cooking time slightly if they are a denser variety.
  • Green Beans: Beyond adding a vibrant pop of color, green beans offer a lovely fresh, slightly crisp contrast to the richness of the chicken and potatoes. Keeping them whole allows them to bake to a perfectly tender-crisp texture. They absorb the flavors of the marinade beautifully. If you don’t have green beans, feel free to experiment with other quick-cooking vegetables like trimmed asparagus spears or even bell pepper strips, added about halfway through the cooking process.

The Flavor Powerhouse: Easy Mediterranean Marinade

  • Onions and Garlic: These foundational aromatics are absolutely essential for building a robust flavor base. While you can certainly chop them very finely by hand, for ultimate ease and a smooth marinade, I strongly advocate for using a food processor. Pureeing them ensures their flavors are fully dispersed throughout the sauce, adhering perfectly to every piece of chicken and vegetable. For a truly authentic Mediterranean chicken, don’t skimp on the fresh garlic!
  • Crushed Tomato or Passata: This is a key ingredient for the marinade, providing a bright, slightly sweet, and tangy base. It’s important not to confuse this with thicker tomato paste. You need the runnier consistency of crushed tomatoes or tomato passata, which is a smooth, sieved tomato puree. This ensures the marinade coats everything evenly and contributes to the delicious pan juices. If you only have canned diced tomatoes, you can pulse them briefly in the food processor to achieve a more consistent texture.
  • Simple Spices & Olive Oil: The beauty of Mediterranean cooking often lies in its straightforward yet potent spice blends. For this recipe, we use a harmonious mix of paprika (for warmth and color), dried oregano, dried basil, dried parsley, salt, and black pepper. These herbs and spices are staples in Mediterranean cuisine, delivering an aromatic depth that elevates the entire dish. Don’t worry if you only have one or two of the dried herbs on hand; the result will still be incredibly flavorful. A good quality extra virgin olive oil binds these flavors together, adding richness and helping the chicken crisp up in the oven.

Gathering these simple yet powerful ingredients is the first step towards creating a Mediterranean chicken dinner that will become a staple in your home. The magic truly lies in how these components interact and meld together during the roasting process, creating a dish that is far greater than the sum of its parts.

The Very Simple Method: Crafting Your One-Pan Mediterranean Chicken

This recipe is designed for maximum flavor with minimum fuss, making it ideal for busy weeknights or relaxed weekend meals. Follow these simple steps to bring a taste of the Mediterranean to your table.

Start by preheating your oven to a robust 400°F (200°C). This ensures that when your dish enters the oven, it immediately begins to cook efficiently, leading to that desirable crispy skin and tender interior.

Next, it’s time to prepare the star of the show: the marinade. This fragrant blend is what infuses the chicken and vegetables with their signature Mediterranean character. Place the quartered onions and peeled garlic cloves into a mini food processor. Pulse them until they are finely pureed. The goal here is a smooth consistency so the marinade is evenly distributed. If you don’t own a food processor, don’t worry! You can achieve a similar result by finely mincing the onions and garlic by hand, ensuring they are as small as possible to release their full flavor.

Once the onions and garlic are pureed, add the crushed tomato (or passata), olive oil, and all the specified spices: paprika, dried basil, dried oregano, dried parsley flakes, salt, and black pepper. Pulse the food processor again for about 20 seconds, allowing all the ingredients to thoroughly combine. The result should be a slightly thick, grainy, and vibrant marinade that is ready to coat your chicken and vegetables.

Now, let’s assemble your one-pan masterpiece. In a large 9×13-inch oven-safe baking dish, spread out your peeled and cubed potatoes and the trimmed green beans. These will form a delicious bed for your chicken, soaking up all the incredible flavors. Sprinkle them with a pinch of salt, then add two tablespoons of the prepared marinade. Toss everything together vigorously until the vegetables are well coated. Spread them evenly across the bottom of the baking dish.

Next, carefully arrange the chicken pieces on top of the seasoned vegetables. Spoon over all the remaining marinade, ensuring every nook and cranny of the chicken is generously covered. Take a moment to work the marinade into the chicken, massaging it gently to guarantee maximum flavor penetration. Distribute the chicken pieces evenly for consistent cooking and browning.

Finally, add 1 cup of water to the baking dish. This might seem counterintuitive for crispy chicken, but it’s a critical step. The water serves multiple purposes: it prevents the chicken and vegetables from drying out during the prolonged baking time, creates a steamy environment initially for tender meat, and most importantly, forms the foundation of those ridiculously delicious pan juices. Bake the dish in your preheated oven for 1 hour, uncovered. Baking uncovered is key to achieving that wonderfully crispy, golden-brown chicken skin you crave.

After one hour, your kitchen will be filled with an incredible aroma. Check the chicken to ensure it’s thoroughly cooked. The juices should run clear when pierced, or an instant-read thermometer inserted into the thickest part of the thigh (avoiding the bone) should register 165°F (74°C). If you desire an even deeper golden color or crispier skin, you can broil the chicken for an additional 1 to 2 minutes. Keep a close eye on it, as broilers can quickly go from perfect to burnt! Once out of the oven, allow the dish to rest for about 5 minutes before serving. This allows the juices to redistribute, ensuring every bite is as flavorful as possible.

Adapting This Recipe for Different Chicken Cuts

While bone-in, skin-on chicken thighs and drumsticks are highly recommended for this Mediterranean chicken recipe due to their flavor and ability to withstand longer cooking times without drying out, you can absolutely adjust the cook time and method to suit other cuts like boneless chicken thighs or chicken breast. The key is to account for the different cooking speeds to ensure everything is perfectly done.

  • Boneless Chicken Thighs: This is an excellent alternative if you prefer boneless chicken or need a slightly faster cooking time. Boneless thighs are still relatively forgiving and will remain juicy.
    • Preparation: Prepare the potatoes and green beans exactly as instructed, mixing them with a portion of the marinade.
    • Initial Bake: Begin by baking just the potatoes and green beans in the oven for at least 20 minutes. This gives the denser vegetables a head start, as boneless chicken will cook much quicker.
    • Adding Chicken: Remove the baking dish from the oven, then add the marinated boneless chicken pieces on top of the partially cooked vegetables. Ensure the chicken is spread out in a single layer.
    • Final Bake: Return the dish to the oven and continue baking for another 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Keep an eye on it to prevent overcooking.
  • Boneless Chicken Breast: Chicken breast is leaner and cooks the fastest, so careful timing is essential to prevent it from becoming dry.
    • Preparation: For the best results, make sure you use even-sized chicken breast pieces. If your breasts are very thick, I recommend pounding them down to an even 1-inch thickness using a meat mallet or the bottom of a heavy pan (I explain how to pound chicken breast in this escalope recipe – but don’t cut these in half, keep them whole for this recipe). This ensures even cooking.
    • Initial Bake: Bake the seasoned vegetables (potatoes and green beans) on their own for 30 minutes. This allows the potatoes ample time to soften.
    • Adding Chicken: After 30 minutes, remove the pan from the oven and carefully arrange the marinated chicken breast pieces on top of the vegetables.
    • Final Bake: Return the dish to the oven and bake for an additional 15 to 18 minutes. Begin checking for doneness around the 15-minute mark. The chicken should be white throughout, and an internal thermometer should read 165°F (74°C).

While these adjustments allow for different chicken cuts, remember that bone-in chicken pieces will naturally yield a richer, more flavorful sauce due to the marrow and fat rendering during cooking. However, both boneless thighs and chicken breast, when prepared with these modifications, will still deliver a wonderfully delicious and satisfying Mediterranean meal.

Delightful Serving Suggestions for Your Mediterranean Chicken

This ridiculously good Mediterranean chicken is a complete meal in itself, thanks to the integrated potatoes and green beans. However, the abundant, savory pan juices are a star on their own, making it perfect for pairing with complementary sides that soak up every last drop of flavor. Here are my top recommendations for serving this fantastic dish:

Hands down, my absolute favorite way to serve this chicken is either with warm, crusty bread or alongside fluffy rice. For bread, a simple baguette, pita bread, or any rustic loaf is ideal for swooping up the rich, aromatic juices. If you opt for rice, I particularly love spooning all the savory juices over a bed of light and airy Vermicelli Rice – it’s a divine combination that transforms every grain into a flavor explosion. You can also serve it with a vibrant and aromatic Mediterranean Yellow Rice, which adds another layer of color and subtle spice to the meal. The rice becomes infused with the essence of the chicken and vegetables, creating a truly harmonious plate.

As for adding more greens or a fresh element, a quick and refreshing salad is always a fantastic choice. I often whip up my classic Arabic Chopped Salad, with its crisp cucumbers, juicy tomatoes, and vibrant herbs, which provides a wonderful textural and flavor contrast. Alternatively, if I have cabbage in the fridge, my zesty Lebanese Cabbage Slaw offers a delightful tangy crunch that cuts through the richness of the roasted chicken beautifully. Both salads are easy to prepare and elevate the entire dining experience, adding brightness and freshness to your Mediterranean feast.

One of the best things about this recipe is how wonderfully it holds up as leftovers! The flavors tend to deepen overnight, making it just as enjoyable the next day. You can easily shred the chicken off the bones and use it as a flavorful filling for sandwiches or wraps, perhaps with a dollop of hummus or a sprinkle of fresh herbs. Or, simply reheat the chicken and vegetables as-is for another delicious and quick meal. It’s a fantastic recipe for meal prepping, allowing you to enjoy healthy, flavorful meals throughout the week with minimal effort.

Ingredients

  • 1 kg bone-in chicken thighs and drumsticks, Mix of both or just one type of cut
  • 3 medium yellow potatoes, washed and peeled
  • 200 g green beans, washed and trimmed
  • 1/2 teaspoon kosher salt
  • 1 cup water

For the Marinade:

  • 1 small onion, peeled and quartered
  • 5 large garlic cloves, peeled
  • 1/2 cup crushed tomato, or passata or tomato sauce
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley flakes
  • 1.5 teaspoon kosher salt
  • 1/2 teaspoon black pepper, more per preference

Instructions

  • Preheat oven to 400F (200°C).

To Prepare the Marinade:

  • Blended tomato, onion and garlic spice paste in a food processor with a metal spoon on a blue tiled background
In a small food processor or blender, add the quartered onion and the garlic cloves. Pulse for a few seconds until they are pureed. Next, add the crushed tomato, olive oil, paprika, dried basil, dried oregano, dried parsley flakes, salt and black pepper. Pulse for 20 seconds until the mixture is combined and smooth. The result will be a thick, slightly grainy sauce. Set aside.

To Assemble the Chicken Dish:

  • cubed potatoes and trimmed green beans mixed with blended spice mixture in a white and blue rimmed baking pan on a blue tiled background
Peel the potatoes and chop them into 1-inch cubes. Wash and trim the green beans, leaving them whole. Place the potatoes and green beans in a 9×13 baking dish. Dollop 2 tablespoons of the marinade over the vegetables, then sprinkle them with 1/2 teaspoon of salt. Mix to combine and spread out evenly in the baking dish.
  • Chicken, cubed potatoes and trimmed green beans mixed with blended spice mixture in a white and blue rimmed baking pan on a blue tiled background
Place the bone-in chicken pieces on top of the vegetables. Spoon all of the remaining marinade over the chicken. Work the marinade into the chicken, ensuring each piece is covered well. Spread the chicken out evenly over the vegetables.
  • Add 1 cup of water to the baking dish. Place it in the oven for 1 hour, uncovered.
  • Baked mediterranean chicken with potatoes and green beans in a white and blue rimmed baking dish with a metal spoon on a blue tiled background
After 1 hour, carefully baste the chicken pieces with the flavorful juices that have accumulated at the bottom of the pan. Check to ensure the chicken is cooked through (either cut into a thick piece to ensure it is white throughout and the juices run clear, or use an instant-read thermometer which should read 165F (74°C) when inserted into the thickest part of the meat). If desired, broil the chicken for 1 to 2 minutes to achieve extra crispiness and a beautiful golden-brown color on the skin. Remove from the oven and allow it to cool for 5 minutes before serving.
  • Serve the chicken hot with a refreshing side salad, warm bread, or your favorite rice.

Notes

  • Bone-in chicken thighs or drumsticks are highly recommended for this recipe as they provide the best flavor and juiciness. Using chicken breast is not advised without significant adjustments, as it will cook much faster than the potatoes and is prone to drying out.
  • If you prefer a thicker, more concentrated sauce, you can decrease the amount of added water to 3/4 cup. This will result in a richer, more viscous pan sauce.
  • For those without a small food processor, you can still achieve a delicious marinade. Simply finely mince the onions and garlic by hand, ensuring they are chopped as small as possible, then mix them thoroughly with the rest of the marinade ingredients. The texture will be slightly different, but the flavor will still be fantastic.
