This layered zucchini dish is my go-to when I need a quick, flavorful way to use up zucchini. The flavors are inspired by kousa mahshi but it comes together much faster. Perfectly roasted or air-fried zucchini is layered with seven-spiced ground beef, a garlicky tomato sauce, and a cooling mint yogurt sauce. Toasted pine nuts add a crunchy finish. Serve with warm pita or crusty bread for scooping—it’s wonderfully addictive and ideal for casual weeknight meals or weekend gatherings.

I created this dish out of my affection for familiar Middle Eastern flavors and a desire to simplify them. Lately I’ve enjoyed “deconstructing” classic recipes into faster, easier versions that still capture the essence of the originals. This layered zucchini is one such adaptation—minimal hands-on time, maximum flavor. It works well warm, at room temperature, or even chilled if you prefer. The components are easy to make ahead and assemble when ready to serve.
How to Make It & Adjust It
This recipe is flexible. If you prefer a vegetarian version, skip the ground beef and keep the yogurt and tomato components—fried or roasted zucchini layered with the mint yogurt alone is delicious. The quantities below make enough for about six servings and scale easily. You can roast the zucchini in the oven, air fry it, or pan-fry slices until golden and tender.






Assembly is straightforward: arrange the zucchini in an even layer on a large platter, pile on the seasoned ground beef, spoon over the garlicky tomato sauce, and finish with generous dollops or a drizzle of the mint yogurt. Scatter toasted pine nuts on top for texture and a final drizzle of olive oil if desired. This presentation invites sharing and makes it easy to scoop up with pita or flatbread.

Layered Roasted Zucchini with Ground Beef, Tomato & Yogurt Sauce
Ingredients
For the zucchini:
- 2 green zucchini, sliced into 1/4 inch circles
- 1/4 teaspoon salt
- 4 tablespoons extra virgin olive oil
For the ground meat:
- 2 tablespoons extra virgin olive oil
- 250 g lean ground beef
- 1 teaspoon seven spice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the tomato sauce:
- 2 tablespoons extra virgin olive oil
- 3 garlic cloves, finely diced
- 2 tablespoons tomato paste
- 1/2 cup water
- 1/4 teaspoon salt, to taste
- 1/4 teaspoon Aleppo pepper, or more to taste
For the yogurt sauce:
- 1 cup plain full-fat yogurt
- 1/2 garlic clove, grated
- 2 tablespoons lemon juice
- 2 teaspoons dried mint
- 1/4 teaspoon salt, more to taste
To garnish:
- 1 tablespoon extra virgin olive oil
- 1/4 cup pine nuts
Instructions
- Toss the zucchini slices with salt and olive oil. Air fry at 400°F for about 12 minutes, or spread on a parchment-lined sheet pan and bake at 425°F for 20–25 minutes, until soft and lightly golden.
- Heat olive oil in a skillet over medium-high heat. Brown the ground beef, breaking it into small pieces. Stir in seven spice, salt, and black pepper. Cook until caramelized and aromatic. Taste and adjust seasoning.
- For the tomato sauce, warm olive oil in a small saucepan over medium heat and sauté the garlic briefly until fragrant. Add the tomato paste and cook for a few seconds, stirring. Add the water, salt, and Aleppo pepper. Simmer for a few minutes to meld the flavors.
- Make the yogurt sauce by whisking together yogurt, grated garlic, lemon juice, dried mint, and salt until smooth. Adjust lemon and salt to taste. Keep chilled until serving.
- In a small skillet, heat 1 tablespoon olive oil and toast the pine nuts until golden, about 3–5 minutes, stirring constantly to avoid burning. Remove from heat.
- To serve, arrange the zucchini in an even layer on a large platter. Spoon the ground beef over the zucchini, then drizzle or spoon the tomato sauce over the meat. Add dollops or a light drizzle of the mint yogurt sauce. Sprinkle with toasted pine nuts and serve with warm pita or bread for scooping.
Notes
- You can air fry, roast, or pan-fry the zucchini depending on time and equipment. Each method yields slightly different texture—air frying concentrates flavor quickly while roasting gives a more even caramelization.
- Adjust the Aleppo pepper to taste. If you prefer milder heat, reduce it; for more kick, add a pinch when serving. Slivered almonds or chopped pistachios also work as an alternative garnish.
- This recipe holds well in the fridge for a day and is excellent for entertaining because the components can be made ahead and assembled just before serving.
