Iraqi-Style Ground Beef and Potato Curry

When I need a quick, satisfying weeknight meal that uses up ground beef in the fridge, I turn to this Iraqi-style one-pot ground beef and potato curry. It’s fast, family-friendly, and full of warm, aromatic spices—my favourite Iraqi trio of curry powder, cumin and coriander give it depth. The beef is cooked first until well browned and caramelized, which builds serious flavour. Serve it with bread or over rice for a comforting, complete meal. Below I’ll walk you through the steps and share tips that make this dish shine.

A quick “kari” was always one of my dad’s go-to dinners. His version features chicken and mushrooms, but this ground beef variation is the one I make most often because my kids love it and it’s easy to assemble. Ground beef is a staple in my kitchen, and when we’ve had enough of other favourites, this curry comes together with simple pantry and freezer staples: potatoes, frozen peas, and a handful of spices.

What really transforms this curry is the caramelization step. When testing this recipe I made a point of letting the beef brown and crisp slightly by spreading it into a single layer and leaving it alone for a few minutes on medium-high heat. Once those edges darken, stir and let another side brown. That extra time developing colour adds a deep, savory note that’s hard to replicate any other way. When I rushed and skipped that step the dish was still tasty, but it lacked the same richness.

How To Make This Ground Beef Curry

For this recipe you’ll need about 900 g (roughly 2 pounds) of ground beef. A lean grind works well; if you choose medium ground beef, you can slightly reduce the added oil because the meat will release more fat as it cooks. The fat content will help with caramelization and add flavour.

I recommend yellow potatoes for this dish because they cook quickly and become creamy without falling apart. Peel and chop them into roughly 1/2 inch chunks—no need to be exact. You’ll also want a bag of frozen peas (or a mix of peas and carrots or green beans if your family prefers). Frozen vegetables are convenient and hold up well in the simmer.

I love serving this curry over vermicelli rice or saffron rice with a dollop of plain yogurt on the side. A crisp Arabic salad or a simple cabbage slaw complements the dish well, adding freshness and crunch to the meal.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 900 g lean ground beef
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 1/2 teaspoons curry powder
  • 1/2 teaspoon turmeric

For the Potatoes & Peas

  • 4 yellow potatoes, peeled and chopped into 1/2 inch chunks
  • 1/4 teaspoon salt
  • 3 cups frozen green peas
  • 1 tablespoon cornstarch

Instructions

  • Place a large, 2-inch-deep skillet with a lid on medium heat and add 1 tablespoon of extra virgin olive oil. Heat for a few seconds.
  • Add 900 g lean ground beef and break it into small pieces with a wooden spoon. Cook until fully browned and beginning to caramelize, spreading the beef into a single layer and leaving it undisturbed for a few minutes at a time. This should take about 10–12 minutes.
  • Stir in 1 1/2 teaspoons salt, 1/2 teaspoon ground black pepper, 1 teaspoon paprika, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 2 1/2 teaspoons curry powder (mild), and 1/2 teaspoon turmeric. Mix well so the spices coat the meat.
  • Add the chopped potatoes and 1/4 teaspoon salt, stirring to combine with the beef and spices.
  • Pour in 3 1/2 cups of water, increase heat to high, cover, and bring to a boil. Once boiling, reduce heat to maintain a gentle simmer.
  • After 20–25 minutes check that the potatoes are tender and taste for seasoning; adjust salt and spices as needed.
  • Add 3 cups frozen peas. Whisk 1 tablespoon cornstarch with 1 additional cup of water to make a slurry and pour it into the skillet. Cover and simmer for 7 minutes, until the peas are cooked through but still hold some texture and the sauce has thickened slightly.

Notes

  • Caramelizing the ground beef in the first step is key to deep flavor—don’t rush it. Allow the meat to brown and develop color rather than stirring constantly.
  • If your curry powder is spicy, start with less and add more gradually to taste during the simmer.
  • The cornstarch slurry at the end slightly thickens the sauce for a richer mouthfeel, but you can omit it if you prefer a thinner broth.
  • Serve over rice with a spoonful of yogurt and a fresh salad for a balanced meal.
