Dough

  • 1 cup non-dairy milk
  • 1/4 cup vegan butter
  • 2 1/4 tsp active dry yeast
  • 1 tbsp sugar
  • 3 1/2 cups all purpose flour
  • 2 tsp lemon zest
  • 1/4 tsp salt

Lemon-Sugar Filling

  • 1/4 cup vegan butter, softened
  • 1/2 cup monk fruit sweetener, or sugar
  • 3 tsp lemon zest

Vegan Cream Cheese Frosting

  • 2 cups powdered monkfruit sweetener, or powdered sugar
  • 2 tbsp vegan cream cheese
  • 2 tbsp vegan butter, softened
  • 1 1/2 tsp non-dairy milk, oat, soy, almond
  • 1/4 tsp vanilla extract
  • lemon zest, for garnish

Instructions

 

Make the dough

  • In a small bowl, gently warm the non-dairy milk and vegan butter in the microwave for about 1 minute 30 seconds. The mixture should feel like warm bath water (not too hot, not too cold) to the touch. Transfer this mixture to the bowl of a stand mixer (or a large mixing bowl for hand mixing) and stir in the sugar and active dry yeast. Allow this mixture to sit undisturbed for 5-10 minutes. The yeast is active when it becomes foamy on the surface and emits a distinct yeasty aroma.
  • Gradually incorporate the all-purpose flour into the mixing bowl, adding approximately 1/2 cup at a time. Mix using the dough hook of a stand mixer on low speed, or vigorously with a wooden spoon until a cohesive dough forms. The dough should easily pull away from the sides of the bowl and should not be overly wet or sticky to your hands. Adjust flour quantity slightly if needed.
  • Add the salt and the 2 teaspoons of lemon zest to the dough. Continue to knead the dough for an additional 8-10 minutes, either by hand on a lightly floured surface or using your stand mixer’s dough hook, until it is smooth and elastic.
  • Lightly oil a large clean bowl. Transfer the kneaded dough to this bowl, turning it once to coat all sides with oil. Cover the bowl snugly with cling wrap and then a clean tea towel. Place the bowl in a warm, draft-free spot and allow the dough to rise for approximately 1 1/2 hours, or until it has doubled significantly in size.

Make the filling

  • In a small bowl, combine the softened vegan butter, monk fruit sweetener (or sugar), and 3 teaspoons of lemon zest. Use a spatula to mix these ingredients thoroughly until they form a uniform, spreadable paste. Set aside.

Assemble the rolls

  • Once the dough has successfully doubled in size, gently punch it down to release the air. Transfer the dough to a generously floured work surface. Using a rolling pin, roll the dough into a rectangular shape, approximately 14×9 inches.
  • Using your spatula, evenly spread the prepared lemon-sugar filling over the entire surface of the dough, leaving a clear border of about 1/4-inch along all edges.
  • Starting from the 9-inch side, carefully and tightly roll up the dough into a log. Aim for a compact roll to ensure beautiful swirls in your finished buns.
  • Using a sharp serrated knife (or unflavored dental floss for very clean cuts), trim about 1/2 inch off each end of the dough log to create neat edges. Then, cut the remaining log into nine even-sized rolls, each approximately 1-inch thick.
  • Arrange the cut rolls side-by-side in an oiled 8×8-inch baking dish, or one lined with parchment paper. Leave a little space between them, as they will expand during the final rise and baking.
  • Cover the baking dish loosely with cling wrap and a tea towel. Return it to a warm place for a second rise, allowing the rolls to proof for another 30-45 minutes, or until visibly puffy.
  • While the rolls are on their second rise, preheat your oven to 350°F (175°C). Once preheated and risen, bake the rolls uncovered for 35-40 minutes, or until they are beautifully golden brown on top and cooked through. If you notice the centers rising too much during baking, gently push them down with a spatula.
  • Once baked, remove the rolls from the oven. Allow them to cool in the baking dish for at least 15-20 minutes before proceeding to frost them. This cooling period is crucial for the frosting to set properly.

Make the frosting

  • In the bowl of a stand mixer fitted with a whisk attachment (or using a hand-held mixer), combine all of the frosting ingredients: powdered monk fruit sweetener (or powdered sugar), vegan cream cheese, softened vegan butter, non-dairy milk, and vanilla extract. Beat on medium speed until the frosting is light, fluffy, and completely smooth. Scrape down the sides of the bowl as needed.
