  • ½ tsp vanilla extract
  • pinch salt

Instructions

 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together the almond flour, peanut butter, maple syrup, vanilla extract, and salt until smooth.
  • Scoop and roll 1 tablespoon sized balls of dough and place on the baking sheet. Place two of the balls next to each other (make sure they’re connected/touching) to create a peanut shape. If the dough is super sticky, wet your hands.
  • Press down on each ball with a fork to create a hatch pattern. Dip the fork in water if it is sticking to the dough.
  • Bake for 9-10 minutes, or until lightly golden brown. Remove from oven and allow to cool fully before filling. They will seem soft when you take them out, but they will firm up as they cool.
  • Sandwich about 2 tsp of peanut butter between the cookies and press together. Enjoy!
