Essential Ingredients for Your Vegan Strawberry Rolls

Crafting these delectable vegan strawberry rolls requires a few key ingredients, each playing a crucial role in achieving that perfect texture and flavor. Here’s a closer look at what you’ll need for the dough and filling:

  • All-Purpose Flour: This forms the foundation of our light and airy dough. While I’ve exclusively tested this recipe with standard all-purpose flour for consistent results, experienced bakers might experiment with a high-quality organic, unbleached variety for an even better texture. For those seeking gluten-free options, a good quality 1:1 gluten-free baking blend could potentially work, though adjustments might be needed.
  • Active Dry Yeast: This is the magic ingredient that gives our rolls their signature soft, fluffy, and airy texture. It’s vital to use *active dry yeast*, not instant yeast, as it requires activation, which contributes to the dough’s structure and flavor development. Always ensure your yeast is fresh and properly activated for the best rise.
  • Sugar: A small amount of sugar is used to “feed” and activate the yeast, helping it to bloom beautifully. While crucial for yeast activation, you can adjust the overall sweetness in the dough itself if you prefer.
  • Vegan Butter: For the dough, I highly recommend using firm vegan butter sticks, such as Earth Balance. Unlike softer butter spreads, sticks contain less water, which is essential for achieving the rich, buttery flavor and a tender, flaky dough that holds its shape well.
  • Non-Dairy Milk: Any unsweetened non-dairy milk will work wonderfully here – almond, oat, or soy milk are all excellent choices. Ensure it’s warmed to the correct temperature to properly activate the yeast without “killing” it.
  • Strawberry Jam: This forms the luscious base of our filling. Opt for a high-quality strawberry jam with a rich fruit flavor and minimal added sugars. Brands like St. Dalfour offer natural jams free from refined sugars, providing an authentic strawberry taste. If fresh strawberries are in season, consider making your own organic strawberry jam for an unparalleled burst of flavor.
  • Fresh Strawberries: Finely diced fresh strawberries are swirled into the filling, providing bursts of juicy, vibrant fruit in every bite. Dicing them small ensures even distribution and prevents them from tearing the dough during rolling.

Crafting the Perfect Vegan Strawberry Cream Cheese Icing

No sweet roll is complete without a generous slathering of rich, tangy icing. Our vegan strawberry cream cheese icing elevates these rolls to pure perfection, adding a creamy, flavorful finish:

  • Vegan Cream Cheese: Choose a good quality, firm vegan cream cheese for the best results. For an extra layer of strawberry goodness, if you can find vegan strawberry cream cheese, it would take this icing to an absolutely divine new level!
  • Vegan Butter: Softened vegan butter is essential for achieving a smooth, spreadable icing consistency. Ensure it’s at room temperature for easy creaming.
  • Powdered Sweetener: To keep this recipe refined sugar-free, powdered monk fruit sweetener is an excellent choice, providing sweetness without the added sugars. However, traditional powdered sugar (confectioners’ sugar) works just as well for those not avoiding refined sugars.
  • Strawberry Jam: A touch of strawberry jam in the icing not only provides a natural, vibrant pink color but also intensifies the berry flavor, harmonizing beautifully with the roll’s filling.
  • Vanilla Extract: Just a splash of high-quality vanilla extract enhances all the other flavors, adding a warm, aromatic depth to the icing.

Beyond Cinnamon: A “Love Letter to Sweet Rolls”

These vegan strawberry rolls are essentially a vibrant, springtime alternative to my highly popular recipe, The Best Vegan Cinnamon Rolls. While traditional cinnamon rolls are always a comforting classic, I found inspiration in the abundance of fresh spring produce. The addition of juicy strawberries infuses these baked goods with an unmistakable burst of sweet summertime flavor, making them an ideal choice for a lighter, fruitier treat. They’re a fantastic option if you’re craving something different from the usual cinnamon roll recipe, or if you’re searching for an exciting new dish to serve for brunch or breakfast on special occasions like Valentine’s Day or Mother’s Day.

Tips for Baking Perfect Vegan Strawberry Rolls

Achieving bakery-quality vegan strawberry rolls at home is entirely possible with a few helpful tips:

  • Dough Consistency is Key: The dough should be soft, pliable, and slightly sticky, but easily pull away from the sides of the bowl. Avoid adding too much flour, which can result in dry, dense rolls. A well-kneaded dough will be smooth and elastic.
  • Warm Environment for Proofing: Yeast loves warmth! Find a cozy spot in your kitchen, like a slightly warmed oven (turned off) or near a sunny window, to let your dough rise. This ensures it doubles in size, creating those beautiful airy rolls.
  • Generous Flour for Rolling: When rolling out the dough, don’t be shy with the flour on your work surface. A well-floured surface prevents sticking and makes the rolling and cutting process much easier and less messy.
  • Tight Rolling for Swirls: Roll the dough up as tightly as possible from the longer side. This creates those iconic, mesmerizing swirls in your rolls. Don’t worry if a little filling escapes – you can always spoon it back on top.
  • Sharp Knife for Clean Cuts: Use a serrated knife or even unflavored dental floss to cut your rolls. This helps create clean cuts without squishing the delicate dough and losing the filling.
  • Don’t Overbake: Keep an eye on your rolls while baking. They should be golden brown on top. Overbaking can lead to dry rolls. If they start to brown too quickly, you can loosely tent them with foil.
  • Cool Before Icing: Allow the rolls to cool slightly before adding the icing. This prevents the icing from melting completely and allows it to set beautifully, creating that gorgeous, creamy layer.

Serving and Storage Suggestions

These vegan strawberry rolls are versatile and perfect for any occasion:

  • For Brunch: Serve them warm with a side of fresh fruit or a cup of coffee for an unforgettable brunch spread.
  • As a Dessert: A decadent end to any meal, perhaps with a scoop of vegan vanilla ice cream.
  • Thoughtful Gift: Package a few rolls in a decorative box for a homemade gift that’s sure to impress friends and family.
  • Storage: Store leftover rolls in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to 5 days.
  • Reheating: For best results, gently reheat rolls in the microwave for 15-30 seconds or in a preheated oven at 250°F (120°C) for 5-10 minutes until warmed through.

Ingredients

Dough

  • 1 cup non-dairy milk
  • ¼ cup vegan butter
  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon sugar, optional, to help activate the yeast
  • 3 ½ cups all purpose flour, organic, unbleached
  • ¼ teaspoon salt

Strawberry Filling

  • ½ cup strawberry jam
  • ½ cup fresh strawberries, finely diced

Vegan Strawberry Cream Cheese Icing

  • 2 ½ cups powdered monkfruit sweetener, or powdered sugar
  • 2 tablespoons vegan cream cheese, if you have strawberry cream cheese, use that!
  • 2 tablespoons vegan butter, softened
  • 2 tablespoons strawberry jam
  • ¼ teaspoon vanilla extract

Instructions

Make the dough

  1. In a small bowl combine the non-dairy milk and vegan butter and heat in the microwave until warm, about 1 min 30 sec (it should feel like warm bath water, not too hot but not too cold). Transfer to the bowl of a stand mixer (or a large mixing bowl) and mix in the sugar and yeast. Let it sit for 5-10 minutes to allow the yeast to activate (you’ll know it’s done once its foamy at the top and smells of yeast).
  2. Gradually add the flour 1/2 cup at a time to the mixing bowl while mixing with the dough hook of a stand mixer (or using a wooden spoon). The dough should be able to easily pull away from the bowl, it should not be too wet but not too dry. It should not stick to your hands.
  3. Add in the salt, then knead for 8-10 minutes either by hand or in a stand mixer.
  4. Transfer the dough to a generously oiled bowl, cover with cling wrap and a tea towel and set it in a warm place to rise for 1 ½ hours, or until doubled in size.

Assemble the rolls

  1. Prepare a parchment lined 8×8 baking dish.
  2. Once the dough is doubled in size, transfer to a generously floured surfaced and roll the dough into a 14×9 rectangle. It’s important the surface is well floured so it’s easier to roll up.
  3. Using a spatula, spread the strawberry jam evenly over the dough, leaving about 1/4-inch from the edges. Then, sprinkle on top the diced strawberries.
  4. Tightly roll up the dough from the 9-inch side. It might get messy but no worries! If any filling falls out just spoon it on top.
  5. Using a serrated knife, cut about 1/2 inch off the ends. Then, make nine 1-inch cuts to make 9 even-sized rolls. Place the rolls next to each other into the dish.
  6. Cover the dish with cling wrap and a tea towel and set it in a warm place to rise for another 30-45 minutes.
  7. Preheat the oven to 350°F. Bake the rolls uncovered for 35-40 minutes. If the middle of the rolls start to pop up while baking, just use a spatula to push them down.
  8. Once finished baking, remove from the oven and let the rolls cool before icing.

Make the icing

  1. Using a stand mixer or hand-held mixer, cream together all of the icing ingredients: powdered sweetener, vegan cream cheese, softened vegan butter, strawberry jam and vanilla extract.
  2. Spread the icing over the rolls. Garnish with fresh strawberries, if desired. Enjoy!
