  • ½ cup (49.5 g) pecans, chopped
  • ¼ cup (33.5 g) sunflower seeds
  • ¼ cup (16 g) pumpkin seeds, or pepitas
  • 2 tbsp (2 tbsp) pumpkin pie spice
  • 1 tsp (1 tsp) cinnamon
  • ½ tsp (0.5 tsp) salt

Wet Ingredients

  • ½ cup (118.29 ml) maple syrup
  • cup (81.67 g) pumpkin puree
  • ¼ cup (54.5 g) coconut oil, refined
  • 1 tsp (1 tsp) vanilla extract

Instructions

  1. Preheat the oven to 325℉ and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together all of the dry ingredients.
  3. In another bowl, add the coconut oil and melt in the microwave for 30 secs, or until completely melted. Add the remainder of the wet ingredients to the bowl with the coconut oil and whisk until well combined.
  4. Pour the bowl with the wet ingredient mix into the bowl with the dry ingredients. Fold with a wooden spoon until completely combined.
  5. Spread the granola evenly across the baking sheet and bake for 25-30 minutes.
