Weeknight Beyti Kebab with Warm Tortillas

Beyti kebab is a Turkish favourite I often crave, so I created this quicker, weeknight-friendly version that delivers all the flavour without the fuss. Spiced ground beef is formed into logs, wrapped in flour tortillas, baked until golden, and finished with a buttery tomato sauce and a cool, garlicky yogurt sauce. It looks restaurant-worthy but comes together in about 45 minutes — perfect with a simple salad or grilled vegetables.

My Turkish Restaurant Favourite – Made Easier at Home

This recipe is inspired by the classic Beyti kebab served in Turkish restaurants, but it’s adapted for busy evenings. Traditional Beyti is often wrapped in phyllo or yufka pastry and grilled; that takes more time and technique. My version uses flour tortillas (or any large unleavened flatbread like lavash) to save time while keeping the essential flavours: seasoned beef, a buttery tomato sauce and a cooling yogurt drizzle.

How to Make Beyti Kebab with Tortillas

The technique is straightforward: finely chop the onion, parsley and garlic, mix them into seasoned ground beef with a bit of tomato paste and breadcrumbs, shape the mixture into logs, place each log on a tortilla, roll, slice and bake. While the kebabs are in the oven, prepare two simple sauces — a garlicky yogurt sauce and a buttery tomato sauce — that complete the dish.

Preparing the Filling

Start by pulsing the onion, garlic and fresh parsley in a food processor until finely chopped. Squeeze out any excess moisture from the mixture — this prevents the filling from becoming too wet. Combine the vegetables with lean ground beef, breadcrumbs and spices until the mixture is cohesive. Divide into four equal portions and shape each into a log.

Assembling and Baking

Place each 8-inch flour tortilla on the work surface and lay a beef log in the center. Roll the tortilla tightly around the meat, then slice each roll into 1-inch wide pieces. Trim and reserve any tortilla scraps to line the bottom of your baking dish — this helps prevent sticking and fills gaps. Arrange the pieces snugly, seam side down, in an 11″ pan. Lightly spray or brush with oil and bake at 400°F (200°C) for 20–25 minutes, finishing under the broiler for 2–3 minutes if you want extra colour.

The Sauces

The two sauces are quick to prepare and are essential to authentic flavour.

Yogurt sauce: Whisk together full-fat plain yogurt, a small amount of minced garlic, dried mint and a pinch of salt. Keep this chilled until serving so it stays bright and tangy.

Tomato sauce: In a small saucepan, melt unsalted butter over low heat, add tomato paste and cook for a few seconds to take the raw edge off. Add water, Aleppo pepper (or a mild red pepper), and a pinch of salt, then simmer gently for about 10 minutes until the sauce is glossy and slightly thickened. Taste and adjust seasoning.

Serving

Just before serving, drizzle the rolls with both the tomato sauce and the yogurt sauce and garnish with chopped parsley. Serve extra sauce on the side so everyone can add more as they like. A crisp salad, grilled peppers and tomatoes, or simple roasted vegetables make perfect accompaniments.

  • 1/2 tsp ground black pepper
  • 2 tbsp tomato paste (for the filling)
  • 4 flour tortillas, 8-inch (or large lavash)

For the Yogurt Sauce

  • 1 cup full-fat plain yogurt
  • 1/2 garlic clove, minced
  • 1/4 tsp dried mint
  • 1/8 tsp salt

For the Tomato Sauce

  • 2 tbsp unsalted butter
  • 3 tbsp tomato paste
  • 1/2 cup water
  • 1/2 tsp Aleppo pepper (or substitute mild red pepper)
  • 1/4 tsp salt

Notes

  • Tortillas are an easy stand-in for traditional yufka or phyllo; lavash is another good alternative if you prefer a thinner, more flexible flatbread.
  • If seams open during baking, secure them with toothpicks before cooking and remove before serving.
  • To save time, prepare the sauces while the rolls bake; they store well in the fridge for a day or two.
