- Juice of 1 lemon
For the Pan:
- 4 large yellow potatoes, cut into 1-inch chunks
- 1/2 teaspoon salt (for potatoes)
- 1 teaspoon paprika (for potatoes)
- 8 garlic cloves, thinly sliced
- 1/2 cup water
For the Lemon Butter Sauce:
- 1/3 cup lemon juice
- 3 tablespoons unsalted butter, melted
- 2 tablespoons parsley, finely chopped
Instructions
- In an 11×13 inch roasting pan, combine the olive oil, garlic powder, paprika, onion powder, seven spice, salt, pepper, and lemon juice. Add the chicken quarters and toss to coat well. Cover and refrigerate for 1–2 hours. Marinating improves the flavor; you can also marinate overnight.
- Preheat the oven to 400°F. Arrange the potatoes and sliced garlic cloves in the roasting pan with the chicken. Season the potatoes with salt and paprika, then pour in the water to encourage flavorful pan juices.
- Roast uncovered for 1 hour, then check the chicken. If the skin is browning too quickly, tent loosely with foil. The chicken should be falling off the bone; roast an additional 10 minutes if needed until deep golden and cooked through.
- While the chicken rests, melt the butter in a small saucepan over low heat. Remove from heat and whisk in the lemon juice and chopped parsley. Pour the lemon butter sauce over the chicken just before serving to preserve the bright citrus flavor.
