Transfer this mixture to the bowl of a stand mixer (or a large mixing bowl for hand-kneading). Stir in the sugar and active dry yeast. Let the mixture sit undisturbed for 5-10 minutes. The yeast is properly activated when a foamy layer appears on the surface, and you can smell a distinct yeasty aroma.
