Roasted Lemon Garlic Chicken with Irresistible Pan Juices

Although this roasted lemon garlic chicken recipe is straightforward, I tested it many times to get the balance just right. The dish uses bone-in chicken leg quarters marinated in lemon juice and a warm spice blend, then roasted with thinly sliced garlic and potatoes until everything is golden and tender. I finish the chicken with a bright lemon-butter sauce that preserves the lemon’s freshness. Many lemon garlic recipes lose their brightness during roasting; adding lemon at the end is the trick to keep the flavor vibrant. The pan juices are rich and irresistible—seriously worth the effort.

A Classic Flavour Profile – Perfected

Lemon and garlic is a classic combination, and this roasted chicken follows a simple, reliable formula: well-seasoned chicken roasted over potatoes until everything caramelizes. I experimented with multiple ways of preparing the garlic—finely chopped, crushed, pounded, and blended—and found thinly sliced garlic to be the best option. Slicing prevents small burnt pieces from forming on the skin while still infusing the pan with garlic flavor.

The lemon is handled deliberately: some recipes add all the lemon up front and it fades during cooking. To keep the acidity lively, this recipe finishes with a lemon-butter sauce added after the chicken rests. That final touch delivers the fresh lemon punch that makes the dish stand out.

Make Lemon Garlic Chicken With Me

Gather your ingredients and equipment. I prefer bone-in leg quarters, drumsticks, or thighs because they stay moist during the longer roast. Avoid using chicken breasts for this method; they dry out with the extended cooking time.

For the potatoes you can use baby potatoes or larger yellow potatoes cut into roughly 1-inch chunks. Peeled potatoes tend to absorb more flavor from the pan, but leaving skins on works well too. You’ll see chicken broth in some photos, but I’ve tested this with plain water and it produces excellent pan juices—no broth required.

The roasted potatoes with garlic make the perfect accompaniment. I often serve this with a simple finely chopped salad and warm pita or with vermicelli rice to soak up the pan juices. The citrus and garlic flavors pair well with fresh herbs and bread for dipping.

Roasted Lemon Garlic Chicken (With Addictive Pan Juices!)

Yield: 4 Servings

Juicy lemon garlic chicken quarters roasted over garlicky potatoes and finished with a bright lemon-butter sauce. Low effort, high reward.

Ingredients

For the Chicken:

  • 1.4 kg Bone-in, Skin On Chicken Leg Quarters
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon seven spice
  • 1/2 teaspoon ground black pepper
  • Juice of 1 lemon

For the Pan:

  • 4 large yellow potatoes, cut into 1-inch chunks
  • 1/2 teaspoon salt (for potatoes)
  • 1 teaspoon paprika (for potatoes)
  • 8 garlic cloves, thinly sliced
  • 1/2 cup water

For the Lemon Butter Sauce:

  • 1/3 cup lemon juice
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons parsley, finely chopped

Instructions

  • In an 11×13 inch roasting pan, combine the olive oil, garlic powder, paprika, onion powder, seven spice, salt, pepper, and lemon juice. Add the chicken quarters and toss to coat well. Cover and refrigerate for 1–2 hours. Marinating improves the flavor; you can also marinate overnight.
  • Preheat the oven to 400°F. Arrange the potatoes and sliced garlic cloves in the roasting pan with the chicken. Season the potatoes with salt and paprika, then pour in the water to encourage flavorful pan juices.
  • Roast uncovered for 1 hour, then check the chicken. If the skin is browning too quickly, tent loosely with foil. The chicken should be falling off the bone; roast an additional 10 minutes if needed until deep golden and cooked through.
  • While the chicken rests, melt the butter in a small saucepan over low heat. Remove from heat and whisk in the lemon juice and chopped parsley. Pour the lemon butter sauce over the chicken just before serving to preserve the bright citrus flavor.
  • Serve with the roasted potatoes and plenty of pan juices. A side of bread, pita, a fresh chopped salad, or vermicelli rice are excellent for soaking up the sauce.

Notes

  • Marinating, even for one hour, deepens the flavor. Overnight marinating is fine if you have the time.
  • Adding 1/2 cup water helps create the delicious pan juices that carry most of the flavor.
  • Check the chicken at 45 minutes; if it’s browning too quickly, tent with foil for the remaining time.
  • Don’t skimp on the lemon butter sauce — it’s the primary source of fresh lemon flavor in this roast.
