- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 leek, chopped
- 3 celery stalks, chopped
- 3 carrots, chopped
- 2 cloves garlic, minced
- 1 russet potato, chopped into cubes

- 1 (15oz) can white beans, rinsed and drained
- 1 (15oz) can chickpeas, rinsed and drained (optional)
- 1 cup frozen green peas, optional
- 3 cups spinach
