Ingredients

  • 2 red Gala apples
  • toasted coconut flakes
  • vegan mini chocolate chips

Date Caramel

  • 8 Medjool dates, pitted
  • 1/4 cup non-dairy milk
  • 1/2 tsp vanilla extract
  • pinch salt

Instructions

  1. Soak the dates in hot water for 10 minutes. Drain.
  2. Add the Medjool dates, non-dairy milk, vanilla extract and salt to a blender and blend until smooth. You may have to stop to scrape down the sides and give it a bit of a mix a few times. OPTIONAL: mix in 1 tbsp of nut butter to make it extra smooth.
  3. Slice the apples into 1/4-1/2 inch slices and cut a hole out of the center of each apple slice to create a donut shape. Pat the apples slices dry with a paper towel.
  4. Spread the date caramel on top of the apple slices, sprinkle with toasted coconut flakes and mini vegan chocolate chips. Enjoy!
