These bone-in beef short ribs are slowly braised in the oven in a rich, tangy pomegranate sauce until the meat falls apart. The sauce is the star: pomegranate molasses brings bright acidity, ketchup adds depth and umami, and a touch of soy sauce provides balanced saltiness. Onions and garlic simmered slowly with these ingredients transform the naturally fatty ribs into a glossy, flavorful dish. It’s impressive enough for guests yet surprisingly low-effort to prepare. Read on for tips, ingredient notes and a clear method to make them at home.

In classic French cooking, naturally fatty cuts like short ribs are often braised in red wine. The wine’s acidity helps break down connective tissue and its fruity notes complement the rich meat. In Middle Eastern cooking, pomegranate molasses plays a similar role — it cuts richness and adds that distinctive sweet-tart brightness that lifts the dish.
I don’t cook with wine, so for an Arabic-inspired braise I rely on bottled pomegranate molasses. To build complexity I blend it with ketchup for umami and soy sauce for rounded saltiness. A squeeze of lemon, cumin and paprika add warmth and balance. The result is sticky, sweet-and-sour short ribs that are both familiar and refreshingly different.
After several tests this method became one of my favorites and appears in my cookbook. Readers often tell me it’s a standout recipe — likely because it transforms a comforting classic into something with a bright, Middle Eastern flavor profile.
How To Make Low Effort Beef Short Ribs
When I say low effort, I mean it: hands-on time is minimal. You’ll chop an onion, sear the ribs and whisk the sauce — about 10 to 15 minutes of active work. The rest is slow, gentle braising that does the heavy lifting, making this an ideal dish to prepare when hosting.
Keys to Success:
Choose the right cut. This recipe is designed for thick, English-cut bone-in short ribs from the plate or chuck. These are meaty and well-marbled, perfect for long braising.
It is not suitable for flanken or thin “Korean-style” ribs, which are cut across multiple bones and cook quickly; those don’t need hours in the oven.
Don’t skip the sear. Browning the ribs in batches builds a deep, caramelized crust that contributes important beefy flavor to the finished dish.
Cook low and slow. Maintain a low oven temperature and a moist environment. Long, gentle cooking is necessary to break down collagen and render fat; increasing heat to shorten the time will yield tough, chewy meat.
Skim the fat before reducing the sauce. Short ribs release a lot of fat during braising. Remove excess fat before you reduce the liquid so the final sauce isn’t greasy.

After searing, set the ribs aside. Use the fat that remains in the pot to sauté the chopped onion until soft and translucent, about 5 to 7 minutes. While the onion cooks, whisk together the braising sauce ingredients so it’s ready to pour in.

Once the ribs are fork-tender, remove them to a serving platter. The cooking liquid will have a surface layer of fat — remove this by skimming with a spoon or gently blotting with a paper towel. Return the pot to medium-high heat and reduce the sauce until it’s thickened and glossy, about 10–15 minutes. Spoon the concentrated sauce over the ribs when serving.
These ribs pair well with a light, acidic side like a cabbage slaw or a simple salad to cut through the richness. Crispy roasted potatoes, mashed potatoes, or rice are also excellent accompaniments and make the meal feel complete.

Fall Apart Beef Short Ribs With Pomegranate
Ingredients
- 1 1/2 lb bone-in short ribs
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 yellow onion, large, finely chopped
For The Braising Sauce:
- 4 tablespoons ketchup
- 1/2 cup pomegranate molasses
- 2 tablespoons soy sauce
- 6 garlic cloves, minced
- 1 lemon, juiced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 cup water
For Garnishing and Serving
- 1/4 cup parsley, roughly chopped
- 1/4 cup pomegranate seeds
Instructions
-
Preheat the oven to 300°F (150°C). Season each short rib with salt and pepper.
-
In a large Dutch oven or heavy oven-safe pot, heat the oil over medium-high. Sear the short ribs in batches, avoiding overcrowding, until browned on all sides. Transfer the seared ribs to a plate. Remove and discard any excess fat from the pot.
-
Add the chopped onion to the pot and cook, stirring often, until softened and translucent, about 5 to 7 minutes.
-
While the onion cooks, whisk together the ketchup, pomegranate molasses, soy sauce, garlic, lemon juice, cumin, paprika and water in a bowl. Pour the mixture into the pot, bring to a simmer and taste; adjust salt if needed.
-
Return the short ribs to the pot and stir to coat them in onions and sauce. Cover with the lid or aluminum foil and bake for 3 hours, or until the ribs are fork-tender. Uncover and return to the oven for 10–15 minutes to lightly brown the tops if desired.
-
Transfer the short ribs to a serving platter. Skim excess fat from the pot by scooping it off or laying a paper towel on the surface to absorb it, then discard the fat.
-
Simmer the remaining sauce in the pot over medium-high heat for 10–15 minutes until reduced and glossy. Spoon the sauce over the short ribs and serve any extra on the side.
-
Garnish with chopped parsley and pomegranate seeds before serving.
Notes
- This recipe calls for English-cut short ribs (thick, bone-in). Do not substitute thin Korean-style short ribs, which cook much faster and do not require a long braise.
- Serve with a crisp slaw or salad and a starch like rice, mashed potatoes, or roasted potatoes for a complete meal.
